It's been awhile since I made this one, having virtually no access to crabapples, but if you can find them, give this recipe a try.
1/2 gal crabapples
3 1/2 c. sugar
1 1/2 water
2 c. vinegar
2 cinnamon sticks
1 T crushed or powdered ginger
1 T whole allspice
1/2 T whole cloves
Wash and pierce each apple with a needle in several places. Put spices in a tea bag or cheese cloth and put with water and sugar in a pan. Heat until sugar dissolves. Cool. Add apples, simmer until the apples are tender. Let stand several hours or over night. Heat jars in water bath. Heat syrup until thin and remove spice bag. Place apples from syrup pan into a bowl. While still in water bath, fill jars with cold apples. Pour hot syrup over apples. Continue to heat five minutes and put on canning lids. Cool to seal.
