Grandma B's "Swiss Apple Pie"

This Swiss (or Swedish?) recipe is a little more complex than the easy American pie of apples, sugar, lemon juice, and butter but is thick and rich and tasty and worth the bit of extra cost and effort

1 beaten egg
3/4 c. sugar
1/2 c. flour
1 t. vanilla
dash salt
1 t. baking soda
1 c. finely chopped apples
1/2 c. chopped nuts (walnuts or pecans)
spices (Grandma used 1/2 to 3/4 t. apple pie spice mix and 1/2 t. cinnamon; we usually go with about 1 t. cinnamon, 1/4 t. each nutmeg and clove, maybe ginger and allspice, too)

Mix eggs, sugar, and vanilla. Sift together baking powder, salt, and flour. Add flour mixture to sugar mixture. Add nuts, apples, and spices. Bake in small greased pie pan (without a pie crust) at 350 degrees for 30 min or in muffin tin. It can be made in a crust, too, but will need to cook longer. See other pie recipes for timing.
