Meaty taste
Fixing food for a mix of vegetarians and meat eaters? One way to satisfy both without cooking two of everything is to make a vegetarian dish taste more like the meat eaters expect: Fenugreek and a little turmeric will make vegetable soups, stews, cassaroles, and stuffing taste much like those made with boullion or meat broth. Using herb combinations common to meat dishes, such as sage, rosemary, and lemon (as might be used on roasted chicken) also goes a long way to satisfying the palate, which is often more important for social occasions than the substance of any given meal.
