Banana Bread

2 1/2 c all-purpose flour

1 c sugar

3 1/2 t baking powder

1/2 t salt

3 T olive oil

3/4 c milk

2 eggs

1 c mashed ripe to over-ripe banana

opt. 1 c. chopped nuts

Heat oven to 350. "Grease and flour" loaf pans*. Measure all ingredients into a large bowl. Stir thoroughly. Pour batter into pans (up to about half full). If using one large or two medium loaf pans, bake 55 to 60 min (shorter for individual/gift size) or until wooden toothpick inserted into the center comes out clean. Remove from pan (onto plate or cooling rack) and cool before slicing.

* Grease and flour traditionally means coating the inside of a baking pan with shortening or butter, then sprinkle in a couple tablespoons of flour and tapping the sides and tipping the pan until the sides are lightly coated with flour. We usually use a spray olive oil and it works just as well.
